Can you reposition to get 16 slices instead of just 8?

Cut 8 slices, pull it out, reposition it, cut (8) again making 16. Clearly theoretically possible, maybe even easy. However, 'success' will be complicated by the texture of the item. I use it for cheesecake - pulls out clean from the first cut, cake maintains it's structure and the second cut would work. Pecan pie, pumpkin pie - easy. Blueberry pie with a flaky top crust - unclear how the pie and crust survive the first cut.

Will it cut into a 9-inch round cheesecake? That's the size of my pans. Thanks for the help.
