Q: can you simply break this up with a spoon and stir into a coconut milk, etc marinade for chicken and bake with chicken in iron pot in oven?

This is an excellent Thai Curry. The best way to use is to saute' some onion and garlic for about 1 - 2 minutes; add 2 to 3 table spoons of the Thai Curry Paste, continue stirring with the onion and garlic for 1 minute and then add 1 can of Coconut Milk while you stir. Within another minute all should be combined. Add any desired vegetables. Addition of 1 or maybe 2 tablespoons of Thai Fish Sauce makes it perfect!

Q: once open, how long will it last, until it spoils?

I freeze mine. It has not changed the flavor. A little goes a long way.

Q: What is the heat of this compared to the yellow and red curry?

I think that the yellow is the most mild. The green has a much deeper flavor profile than the yellow and red though.
