What are the washing instructions for this peel? I would not want to use this with my food without washing it.

Don't recall the washing instructions, but I washed it with Dawn detergent on a sponge and then rinsed it and allowed to dry. I now store it with my cutting boards and only wash if it gets food on it. I only use it for pizza

Are there 3 different sizes, as it shows on the listing? Looking for the smallest--which one would that be?

I do not believe so. I order 2 and they weren't that large. Perfect size for a personal pizza that is a bit on the large size.

Can I cut pizza directly on this pizza peel?

Yes. In fact I would suggest you do. Rub a little flour and then corn meal and the pizza will slide right off. Roll the dough out first, put it on the paddle, then add sauce and toppings. Just before I try and slide it off onto the stone I run dental floss underneath to make sure it isn't sticking
