Scamorza bianca is a stretched, pear-shaped, curd cheese made from cow's milk. Scamorza bianca has a tan color skin, with the actual cheese being snow-white, hence the name "Scamorza Bianca"; "bianco" being the Italian word for "white". Scamorza can be used as a substitute for mozzarella in many dished. In fact, many chefs opt to use scamorza instead of mozzarella because it melts better in baking. In Neapolitan cooking, grilled Scamorza is a very famous and traditional dish.
