Do these Dura-Ace pads perform noticably better than Ultegra pads in an "Ultegra brake set"?

Are these for carbon or aluminum rims?

Aluminum. Carbon rims need special pads. They usually come with the wheels.

I'm not sure if these are the right pads for me- the dimensions listed here , I suspect are wrong (3 in X 4 in?).

You're right, they aren't 3" x 4", maybe 3/8" by 2 1/2".

Will these fit Ultegra BR-6800 brakes?

I really don't know but why not take the old pads off and compare them to the picture? I would suggest that if your brakes are of fairly new design, they will fit.
