It's strongly reminiscent of beef bouillon, but it's not the same. Vegemite (and Marmite) is salty and pungent in a way that is difficult to describe. I've also tried British Marmite and New Zealand's Marmite (Sanitarium brand) which are similar . British Marmite is, for want of a better descriptor, much more "powerful" than Sanitarium Marmite. Vegemite and Marmite are very strongly flavored substances, which means it doesn't take much at all on buttered toast. As an American, I can tell you that you absolutely cannot spread it in quantities even close to that of a jam or jelly. Back to the soup stock: My advice is to try it experimentally, first, substituting in part or in whole as you would beef bouillon flavoring. It might take some trial and error, like cooking does, to find something that pleases you. I'm sure the product, to those with "the taste for it," will delight. But my experience was as follows: -I'm in my kitchen standing over my skillet. A fresh golden-brown sourdough English muffin comes sizzling out of the pan, butter still glistening on the edges, and onto my plate. -I let the English muffin cool, but not get cold (see Goldilocks and the Three Bears story). -I open the lid to this jar. The vegemite looks delicious, like nutella. -I take a glob of vegemite on the end of my butter knife and spread it across both pieces of the muffin. -I take a bite*. -I work the bite down and begrudgingly take another. -This isn't going to work, I realize, and add a cherry jam over the top of the vegemite. -I take another bite of the English muffin that contains about equal parts/coverage jam & vegemite. -I open the lid to my trash-can, and throw the rest of the muffin away. *The taste reminded me of one of the most salt-saturated things I've tasted. And, once I agreed that vegemite ranked among the saltiest thing I had ever tasted, I sensed a secondary taste, something of a light-mushroom umami (for me). I know what this product is made from, but I thought I'd give my personal account for future buyers. This product seems very efficient as a B vitamin supplement, however, I have chosen other natural foods and drinks rich in these qualities (without the salt). Suggestion for first time tasters: Start small. Maybe you only cover a few bites of your bread or whatever with vegemite.
