De Cecco gently grinds the heart of each grain, mixes it with cold spring water, then kneads the dough slowly. This results in pasta with the exceptional de Cecco aroma, flavor, and consistency. Pasta easily cooks to perfection, has a great firm texture, and a delicious “fresh” pasta taste. It has a rougher surface, which helps the sauce stick to it. Since 1886 we have liked our pasta to be bronze drawn and slowly dried because we like it to fall into the plate full of taste, rough and always "al dente". Even though our taste has not changed, as we feel the same love for tradition, we have continued to improve our production technologies. Bucatini (also called Perciatelli) are originally from Naples and have an elongated shape with a round cross section and are hollow inside. Bucatini all'Amatriciana are famous with tomato sauce, pork cheek and a sprinkling of pecorino romano (sheep's cheese). This type of pasta is quite versatile and also excellent with sauces made with butter, meat or fish. Bucatini are perfect with vegetable sauces too that are prepared with a tomato sauce with peppers, aubergines, courgettes, olives and capers. Available in 16. 0 oz pack.

**Q: my Bon Appetit recipe says bucatini noodle has a little hole running through the body of each strand.  Does this box contain that type of noodle?**
A: Yes. Bucatini has a tiny hole running through the center of the round, spaghetti like noodle. De Cecco is awesome in that the surface is slightly rough and holds sauce and flavors very well. The little hole increases that surface.

**Q: One box of this, for which I pay $2.29 in the store, is $6.60 from this seller? Is that actually true?**
