Happy to have found this flour and mill. I lived in Europe for decades and baked all our bread. Back in the US, it's been hard to find flour similar to the European flours. I've baked with Early Morning Harvest white flour that is not filtered. I bake using a pre-ferment poolish, and my bread was excellent. So, now I'll try for a different texture with this lighter pastry flour using a pre-ferment. I strongly recommend this mill/company. I can't praise them enough.
