What's the specified accuracy of this thermometer?

Per NSF guidelines, the accuracy of this product is +/- 5F.

The ad for this kitchenaid 3-in dial oven thermometer claims it is very accurate. how accurate is this thermometer? in plus/minus degrees?

I bought it because my oven temp is off as much as 15 degrees. Baking is better since we use it.

Can it be used for chicken or fisj

Yes. There is a chicken setting printed on the face. I haven't used it for fish as I just cook fish without a thermometer. If u know what temp you want you can put it in.

Can use it to check chicken being fried in oil?

I would look at the dial: 120 to 200 F. I would use it out of 330 degree oil, not while it's cooking. I would simply say: No you can't *
