Hello, The temperature will depend on the ice packs and the temperature they are frozen to. There are quite a few variables, location temperature and temperature of food, that will cause variation in temperature of the unit.

yes, mine came with the inserts.

Q: Would this work well for pizza toppings? (cheese, sauce, salamis)

Depends on how many pizzas your making, its more used for a bar. If you use the larger inserts it could be good for sauce and cheeses and smaller inserts for toppings, but only at home, not for industrial commercial pizza making.
