This speckled polenta taragna is a blend of course ground corn flour and buckwheat. It tastes a bit nutty when compared to regular Polenta and the texture is a little rougher. This is not the instant type of polenta taragna, the cooking time is approximately 30 minutes.

This is really GREAT stuff!
This is really GREAT stuff!! I'm from South Carolina, and I like it as much as I love grits. But the names will fool you. Polenta is actually more "gritty" than grits, with grits being more creamy! I use it just like I use grits, as a different variation, with a different flavor and texture. 5 to 1 ratio water to polenta, and it (this one) cooks in around 5-7 minutes. I really never add straight water, but usually 2 parts water, two parts Half and Half, and one part Heavy Cream (if I have it on hand). I also add various things, like salt and pepper, olive oil and butter, onion and garlic powder. Sometimes I make what I call "pizza grits" or "pizza polenta" - depending on which I am using. Just add ketchup until the color is a good red color, and then add grated cheese of any kind, until you think you have enough cheese in it. Taste it as you stir in a little at a time. I like it with extra sharp cheddar. Horseradish cheddar makes it really interesting! Or sometimes I leave out the ketchup and just add cheese.

This is a wonderful product. I tasted it for the first time ...
This is a wonderful product. I tasted it for the first time in Northern Italy and drove myself nuts trying to find some to bring him. I only found one bag in a small shop and used it up so quickly that I began to panic. My family loved the earthy nutty flavor. It's totally different than regular polenta, perfect for darker meats especially this time of year. It doesn't just sop up flavor but add to whatever you are cooking.A big thank you to Amazon for carrying because it is almost impossible to find anywhere, this is a must try, you won't be sorry. I use 3 cups of water to 1 cup of the polenta and cook it on a low flame about 10 minutes. Mangia! Enjoy!

Nice
Made a big pot of this polenta. It tastes best with some honey but you may want to use pasta sauce.
