Q: Does it automatically record over old footage when the hard drive is full ?

You can set program to either record over when HD is full or to stop recording.

Q: How much video \wire comes with these? And can I add extensions to the video wires?

It comes with 8 units of 60ft length, I suggest if you need 100 ft. order them do not extend the wires as it affect the clarity or distortion on video picture happened. That's what I experienced..
