What is the shelf life of these?

Very long shelf life if kept in frig. Once you notice they start to wilt just put in baggie n pop in freezer

How many "sets" of leaves do I get with a 1 ounce order?

About 45-50 "sets". Each set is one double leaf.

Do you put the leaves only in while cooking and remove before serving or can these be eaten after they are cooked in a meal? Thanks!

I use them in Tom Kha Goong, and have always left them in with no ill effects. I like leaving it in because it adds color, but at the point you're eating it, the flavor has already been introduced into the dish, so removing them wouldn't hurt anything.

Were these frozen? It appears they have been thawed out en route, and if so cannot be refrozen. Also, no smell.

Mine were not frozen. They are fresh. You don’t get the smell unless you crush them or slice them really thin.
