Absolutely delicious!
This flour is absolutely delicious! It has a fruity, sweet aroma, not bitter tasting at all and the gluten level iOS perfect for sourdough baking. I use a 60/40 ratio or white unbleached and this whole wheat. It has gotten a little pricey, but so has everything else... I also ordered the Great River dark rye flour and made a 100% rye sourdough with it, also very good quality!

Great flour!
I’ve been making sourdough bread for a very long time. I buy various types of organic wheat berries (hard white, spelt, Einkorn) which I mill at home myself for my bread. Usually whole grain bread comes out with the texture of a hockey puck, so I always add a little organic store bought bread flour. That’s what I thought I was buying when I bought this flour. I was very surprised to see that it was an 80% extraction wheat with the bran (which really weighs down a boule of sourdough) mechanically sifted out, but still having the germ intact. I only use organic wheat and had no other bread flour, so I decided to proceed with my baking using these baker’s percentages: 90% of this flour, 5% of my home milled hard white wheat berries, 5% rye flour, 2.2 % Redmond Real Salt, 78% filtered water, and 12% of my active sourdough starter fed with this same flour. I added about 10 extra grams of water during the autolyse because all the whole grains were really absorbing the water. After a 12 hour overnight ferment in my cold kitchen, the dough had nearly tripled in size. I shaped it and proofed for 3 1/2 hours and baked as usual after scoring the boule. The oven spring was the best I’ve ever gotten from an exclusively whole grain sourdough. Normally, I wait until the next morning to cut my bread, but my daughter in law was taking half of it home, so I went ahead and cut it. The crumb is even, not at all doughy and is light in texture. Next time, I’ll add a bit more water for an airier crumb and shape the dough a bit differently. Gluten development was very good. I love this flour and will definitely be buying more. Oh, it tastes fantastic!

Its not very good
Bread crust and taste it was almost like a dog biscuit the crust was way too hard it might be great if you want to make croutons but I can't recommend it I'm sorry

Not unbleached White Bread Flour, rather dark product
This is not what says it is. This is WHOLE WHEAT flour not UNBLEACHED flour. I wanted to buy a good unbleached white Bread Flour flour and was very disappointed. The word “unbleached” is deceitful.

Bugs in the flour
2 out of 4 of the bags had bugs in it. Also spider web looking things. It smelled horrible. I’m testing the other bags that didn’t have bugs but I’m very wary and don’t have very high hopes. Was excited to find an organic USA brand, but this is disappointing.
