Can this be consumed by humans? is it 100% acetylsalicylic acid?

Officially no. The label says "For animal use only." That means you would take it at your own risk. Having said that, I take it myself and I know of others who do too. Human aspirin preparations have all kinds of strange fillers in them such as titanium dioxide, silicon dioxide, talc, etc., which might not be so healthy. This product is 100% aspirin powder with no filler. You must take care with the dose. I would recommend getting a milligram level scale.
