Is this a sauce or a paste?

It is a thick paste. If you want to make tahini sauce you will have to add water, lemon juice, garlic and so on. It's is almost the consistency of peanut butter once it is stirred and refrigerated. I use it to make NY Times salted tahini chocolate chip cookies as well as sauce and it is wonderful

Once opened, how long will it last in the refrigerator?

It will last for at least 4 months as long you don’t double dip into the jar.

Allergy question Does 365 Organic tahini contain paprika, cayenne pepper, and all red pepper?

Amazon didn’t fulfill my order so the product was never received. However the ingredients are disclosed in the item description. Organic sesame seeds and salt, that’s all. This information is readily available on the picture of the product label.
