can i connect this to a humidity sensor?

Hello, yes and no. If the humidity sensor only cycles on and off with changes in humidity level then yes. However if the humidity sensor has a fan speed controller it will not work with this fan motor. I called and the manufacture stated that this type of motor can not be used with a speed controller period. This type of motor is only off / on and constant speed.

What type of fan is inside the FV-30 and FV-40, is it turbine or axial

FV-40 and FV-30 are made with turbine fans.

What color is the vent cover grill?

Note, The Whisperline 440 has No Vent cover grill. It simply has an Intake opening and Output opening. Through the use of different flex or other ducting, you can attach any Vent Cover you want. This is a great unit and I've used them to vent bathrooms (Showers) and draw hot air away from high-heat electronics. Quiet, and reliable. Good Luck.
