How do I install a variable speed control on this fan? I don't understand the wiring diagram provided in the manual.

Your best choice is the speed control from Iliving that matches the fan. Attach the power cord to the fan. Plug the fan into the controller, plug the controller into a wall socket. Set the remote control to desired temp/humidity. The controller ramps the speed up and down as set point is approached. Works great in my 11x34 foot attic.

Can the thermostat be mounted on the louver/exhaust side? I want to move heated air from garage woodstove into my greenhouse.

Should be fine. The thermostat plugs into an outlet and the fan plugs into the thermostat. So you may need to run the electrical cord through the wall separating the garage and greenhouse.
