what seasoning for the white wurst?

This is fine for your "white wurst" or Weisswurst, there is no difference in flavor your white coloration comes from the type of meat you use NOT the seasoning!!! Weisswurst is made from veal and fat back or back bacon and the same seasonings as any other wurst!!! I really wish people would understand what they are talking about before asking questions like this!!!

Yes, the Legg Bratwurst Seasoning works great to make Brat patties also.

do i need to add instacure, curing salt or soy protien concentrate when smoking? if so, how much?

This is a fresh bratwurst seasoning, not smoked. Spices like sage are not good (in my opinion) smoked, hence sage being used in breakfast sausage. You can try using pink salt, but all the recipes online just have you putting fresh brats in the smoker. I dont know how this recipe would taste smoked.
