Hon-mirin is the \"real stuff\" that aji-mirin is looking to mimic; it's a rice vinegar that's been fermented into a wine, adding sweetness to the tart condiment. It's also more expensive to produce. Most recipes calling for mirin can use either with no problem, and often expect you'll be using aji-mirin regardless.
