How do you keep the bottom open to catch food?

They are flexible enough that they stay open. Unlike others. Especially after a few washes.

Is the back made of plastic?

No, it’s made of one layer of 100% polyester fabric. It can be machine washed but I’d not risk putting it in the dryer. It hangs dry very quickly. I’ve had others that have a plastic like backing and it came apart in the dryer.

using this for 2 years for our 3 yrs child, do you have same quality in bigger and wider size with same catch all?

Bumkins makes a Jr. Bib which is the same style but larger and fits ages 1-3+ years.
