Once opened and stored in an airtight container, what is the shelf life?

I buy in bulk and keep it in an air tight glass jar and it has so far lasted without change for two years and counting !

No. It is made from corn. It is concentrated glutamates which are naturally occuring in all foods but in higher concentrations in certain types of foods such as mushrooms or concentrated in fermented products such as soy sauce.
