You have yeast extract listed on your ingredients, is that MSG?

Yeast extract is not the same thing as MSG.  Yeast extract contains naturally occurring glutamates, but not as much as MSG. The main difference between yeast extract and MSG in foods comes down to flavor. MSG doesn't have a flavor.  The term “glutamates” refers to the many forms of glutamic acid. It is an amino acid found naturally in many foods and in our bodies.  Glutamates, like sugar and salt, trigger a response in our brain that make us enjoy our food. This response is not necessarily bad, as a wide variety of foods and traditional dishes contain glutamates.  Some examples of naturally glutamate rich foods include: parmesan cheese, tomatoes and mushrooms, cured ham, slow-simmered stocks (i.e. soup base), walnuts, soy sauce and miso and grape juice. Glutamates don’t just taste good, they ARE good. It is a neurotransmitter in the brain and is essential for life itself. Glutamates are responsible for the taste sensation called “umami”.  If glutamates are natural, where does MSG come from?  Although glutamic acid is a natural amino acid present in almost all living things, MSG is manufactured as a food additive.  Monosodium glutamate (MSG): a highly concentrated sodium salt of glutamic acid.  Today, most MSG is made by fermenting sugar cane or corn.  How is yeast extract different?  The direct answer to the question of whether yeast extract is actually just a hidden form of MSG, is no.  And here’s why...
These two ingredients are completely different, made in completely different ways. Most importantly, they deliver very different forms and concentrations of glutamates.  Yeast extract naturally contains glutamate - typically around 5%. It also contains other compounds that contribute to its unique ability to enhance flavor, including peptides amino acids, and nucleotides.  MSG, inversely, is a highly concentrated and processed form of glutamic acid. It is 100% sodium glutamate.

How do they call 26g per serving low carb?

It is low in “net carbs”. You subtract the carbs from fiber content from the “total carbs” to get the “net carbs”. It’s only the net carbs that raise glucose levels. Google “net carbs vs. total carbs” and you’ll see that low-carb diets generally use “net carbs” to determine affect on glucose levels and also to determine if it’s Keto friendly.

Does the Perfect Ket Mac and Cheese contain MSG?

No, this product contains no MSG.  Here is the ingredient list from the back of the box:  Macaroni: Lupin Flour, water, Sunflower Flour, soluble Tapioca Fiber, Xanthan Gum.  Cheese Seasoning: Dehydrated Cheddar Cheese (pasteurized milk, cheese culture, salt, enzymes), milk solids, salt, butter (cream, salt), natural flavors, milkfat, non-fat dry milk, sodium phosphate, lactic acid powder, yeast extract, xanthan gum.

What do you have to add to prepare this?

Use the whipping cream!! Huge difference. I also added 4 Tbsp butter and found the portions to be bigger than what I eat. Instead of 2.5 servings, I got 3 servings per box. Lowered my net carbs and increased the fat ratio!
