Are they pasteurised? Can it be consumed uncooked?

The eggs can be consumed uncooked. Lots of our customers use them in Protein shakes for example. We use a double pasteurisation process and add a 100% natural preservative. The eggs are pasteurised in the bottle so, until opened, it can be stored for 6 months at room temperature.

are there any other ingredients inside apart of egg whites (preservatives, gum etc.)?

Just looked at the label, it also contains malic acid and preservative nisin. I find it to be a very good product.
