The summer truffle, also known as Saint Jean truffle, is harvested in France but also in Spain, Italy and in some countries of Eastern Europe like Bulgary. Usually bigger and fermer than Tuber Mélanosporum, Tuber Aestivum has a similar skin as that of black truffles. Its flesh is white at the beginning of the season, then becomes brown at the end of the season. Tuber Aestivum has a slight nutty taste and a light mushroom and woods smell. The white Saint Jean truffle can be used grated on a salad with olive oil and Fleur de sel (Flower of salt) for example. Avoid warming up this white truffle too much as it may loose some of its flavor. Regarding wine pairing, this truffle goes very well with a dry white Cote du Rhone or a Rose.
