How flexible is the turner? Is it very, moderately, or not at all?

The turner has no flex and is a very nice piece.

Has anyone used this to scrap out the leftover food in a cast iron skillet?

I would not use a spatula to scrape a cast iron pan. While the pan is hot or warm, cover the stuck on food with water and let is soak, overnight if necessary. Then use a stainless steel sponge to clean the pan, NO soap. Pour a small amount of neutral oil in the pan a wipe with a paper towel.
