I’m looking at this to mainly grate block cheeses. Would this work?

You have to cut block cheeses into small enough sizes to work. Velveeta cheese doesn't work because of its softness; perhaps I should try freezing it. Currently a zucchini peel is stuck between outer and inner cylinders after I grated zucchini for a cake. I may have to replace the device, but I still don't like how small the feed cylinder is. The old fashioned one broke after 15-20 years but had a much larger feed opening.

Has anybody tried spiralizing vegetables with theirs? I've been eyeing this for awhile, but would love it if it could even sloppily spiralize.

NO. the only way to spiral would be if the blade (cutting section) stayed in contact with the vegetable the entire time. there are many blades on each cylinder. these blades break contact with vegetable as cylinder rotates.

Does it grate carrots fine enough for baking cakes?

I use it to grate carrots and zucchini for cakes and breads.

Can use to slice sweet potatoes

I was able to put half of a sweet potato in and it sliced! I didn't try an entire potato, though, as it didn't look like it would fit.
