are these tested for mercury content?

Yes, we do test for heavy metals, and we have several data sets from 2012 on (see below)... all levels were well below the "safe for consumption" range. You are likely aware that we produce one small batch at a time to ensure freshness, higher quality and attention to detail... this includes 3rd party testing all products to ensure purity and product specification.

High quality organs from healthy pasture-raised, grass-fed and grass-finished cows are completely safe to consume. There is a common misconception about the liver being a storage depot for toxins which couldn't be further from fact. One of the many roles of liver is to filter toxins and send them to be expelled — usually in the urine via the kidney. In other words, the liver does not hold on to toxins nor to heavy metals, it expels them. These organs act as a storage depot for vitamins, minerals, co-factors, enzymes and more. Rest assured, organs that come from healthy animals raised on healthy pasture is safe, nutritious and time-tested.

Need more assurance... there are several studies that have evaluated heavy metal levels in the organs and muscle meats of healthy cows. All levels were well below the "safe for consumption" range. What's more is that many instances showed heavy metals were higher in the muscle meats than in the organs. If one were to avoid these traditional, nourishing foods in fear of heavy metal exposure, then one should avoid the rest of the animal, too.

Based on the testing we have done historically, we have established that our products are pure. All values are in parts per million (ppm).

In 2012 we tested beef liver on 2 separate batches and found the following... 
- Lead: 0.047, 0.041
- Arsenic: 0.11, 0.14
 
In 2013 we tested 4 different batches of various organs and glandulars from our Beef Organs and found the following...  
- Mercury: 0.01, 0.01, 0.01, 0.01
- Cadmium: 0.14, 0.41, 0.174, 0.174
- Lead: 0.026, 0.06, 0.06, 0.41
- Arsenic: 0.15, <0.10, <0.10, <0.10

In 2014 we tested 4 different batches of various organs and glandulars and found the following... 
- Mercury: Not tested, not tested, not tested, 0.05
- Cadmium: 0.186, 0.25, 0.197, 0.174
- Lead: 0.041, 0.05, 0.14, 0.041
- Arsenic: 0.10, <0.5, <0.010, <0.5
 
In 2015 we tested 3 different batches of various organs and glandulars and found the following... 
- Mercury:  0.01, 0.01, 0.01, 0.01
- Cadmium: 0.26, 0.23, 0.23
- Lead: 0.054, 0.034, 0.027
- Arsenic: 0.10, <0.10, <0.10
 
In 2016 we tested 2 different batches of various organs and glandulars (for lead only) and found the following... 
- Lead: 0.025, 0.042

In 2017 we tested 4 different batches of various organs and glandulars (for lead only) and found the following...
