Will it work well for hairdye?

The liquid you put through it should be a tad bit thicker than water. So yeah, if hair dye is milk like in consistency I'd say go for it. But you should probably test it on the family cat first.

Does it work good on modle cars

I bought this to use for food/cake decorating, dispensing food grade paints. That said, I would imagine it could be used for model cars or anything else of that size.
