Two Years Later...
I bought this set when I started working in a professional kitchen. I have been using the 8-inch Chef, bread knife, and paring knife religiously. To get these suckers really sharp you need someone with a bench grinder to create an edge for you and continue to sharpen them on a stone. I really like the weight of the knives. You do have to hand wash and hand dry these knives or they will rust, but you would do that for your expensive knives anyways.The only reason I gave this set 3-stars is because my chef's knife recently broke off at the handle. I had noticed before that I had a crack in the metal on the handle, but didn't think anything of it. The other night I was sharpening my knife and it split into two.Definitely good starter knives, but I don't think the amount of knives are necessary and the bag is a little too big. I just bought a Shun Reserve 8-inch Chef's and paring knife.

Wow, wow and WOW!
First off, you have to understand, I am not a pro. I'm just a guy who loves to cook...I've always enjoyed trying new things in the kitchen and, of course, I've got my "signature dishes" that I make on a regular basis. A lot of what I do, I do from scratch. And a lot of it includes fresh fruits and vegetables...especially since my wife and I started Weight Watchers a year and a half ago. I'm losing weight and feeling great but I STILL love to cook! Now I'm cutting up even MORE veggies. When I make a spaghetti sauce, I dice my own Roma Tomatoes...and peppers...and onions...nothing canned, nothing pre-prepped...dozens of veggies all getting diced to go in the sauce...which used to be a HUGE chore.Then, I decided to treat myself for Christmas with this wonderful set of knives. I'd been shopping, I've read all of the reviews here on Amazon and I finally decided to take the plunge.I've always had a couple of "go to" knives in the drawer that I relied on for everything. They weren't the best tools for every job but they were the best knives that I had around. They're nothing special...a couple of CutCo slicers from the early 90s, that kind of thing. We had a Chicago Cutlery block sitting on the counter that I would never touch...my faves were always a better choice. But I had never experienced a REAL kitchen knife until I got these Sabers in hand.I can not begin to explain just what a difference a quality set of knives like these can do for your hands, your arms and your back...not to mention the incredible differences in the food. I now realize that before, when I was dicing, I was actually just kind of mooshing...I wasn't really cutting things up into tiny bits...I was just crushing them down into something that was smooth enough for a sauce. Now, with these Sabers, I am actually dicing. It changes everything. The texture of everything that I do is so much more pleasing. The flavor is retained. And my hands don't ache after an hour of cutting and slicing. I never used to dread doing prep work, but it wasn't something I looked forward to. Now, I can't WAIT to get on the cutting board with these incredible knives. My wife is accusing me of buying random fruits and vegetables just so I'll have something to chop.My new "go to" knives are now the 8" and 10" chef. I used to shy away from big knives...I found them hard to handle and I could never get the results that I would see on TV. I always used to try that rocking motion with the blade for rapid dicing with disastrous results. Now I know why! The strong tung and incredibly sharp edge makes all the difference. I've gotten so much faster with these and much more effective on virtually anything that I chop or dice.The Sabers hold a great edge, but I have gone to the sharpening wand a few times. Just a few swipes to each side at about a 20 degree angle and I'm good to go for several more sessions.My only reservation with this set is the carrying case...it is really outstanding and of excellent quality...but I can't imagine a situation where I'm going to take these knives anywhere outside of my home (believe me...I'm trying to come up with scenarios...I want to show them off!). I can see how a pro doing catering work would get a lot of use out of the carrying bag. It is very impressive and definitely not a cheesy add-on just to flesh out the set. I just don't find it useful. I would have preferred an option that maybe would drop the price a few more dollars by eliminating the carrying bag from the package.Random note...I DID put my new knives in the block that we had on the counter from Chicago Cutlery. They all fit except one...even the sharpening wand. (the CC knives are in the back of a drawer across the room). Please, if anybody thinks that I might be endangering my Sabers by putting them in a wood block, let me know!! I don't want to do anything to damage them. So far (about 6 weeks of use) I haven't noticed anything negative and I do like having them so handy while working in the kitchen.I recommend these knives and this set highly!! It's a great value. I had the chance over the holidays, just a week or two after these came in, to test out a Shun Chef knife at a demo that was set up in a Chicago area Crate and Barrel. Very nice knife...but nothing that made me feel like it was a significant step up from my Sabers. And the knife that I was testing cost $150...just for that ONE knife. They had an 8 piece set (without a carrying bag) on sale for $899. I walked out of C&B feeling like I had made a GREAT choice with my Sabers.

so I invested in a good quality wooden cutting board
If you had asked me before tonight what I thought of these knives, I would've given them 10 stars. Shortly after purchasing them in Jan. 2014, I did realize that my Pyrex cutting board was adversely affecting their edge, so I invested in a good quality wooden cutting board, which helped them to keep their edge. My husband and I use these knives on a daily basis, and I was over the moon with how well they worked, how easy they were to sharpen and how comfortable they were. I ordered the set only days before my father passed away, who was a wonderful, medal-winning chef, and every time I've used them, I've thought of him and how much he would have appreciated them.Until tonight. I was using my favorite blade, which is so comfortable for me to use. It is now 8 months since purchase. I've been using an 18 year old Pampered Chef apple wedger to core and wedge apples to make apple juice, then using my Saber knife to trim the bad spots and cores for making apple cider vinegar out of the scraps. I sliced through a ripe apple, only to have my favorite knife literally break off at the handle.I have owned many brands of knives in my adult life, and have taken my father's sound advice about knives and how a good knife can make or break your cooking experience and thought I was making a sound purchase when I bought this set at a "deal" for over $200. It's not. I can no longer recommend these knives for the price that they are asking.
