How different is the one in the red container vs the white container? I've tried the red (aka hard) but am curious about the white (aka light).

The one in the red container is a bit harder (meaning holds the style in a firmer manner). The white one is not as hard. So the choice between the two is really a matter of what style you are trying to achieve.
