How white are they? From the picture it doesn't look like they match the "Leviton QuickPort Decora Insert" color

These match the Leviton Decora insert , size and color is perfect.

They do have a gold color plating.

Will this insert fit into my Legrand wall plate? My plate looks too small.

These are great. Fit into plate is tight. No added artifacts in signal

Will these work with redmere hdmi cables? Will I lose any data?

no you won't lose any data, but make sure you are not running too marginal on the length
