WOW, BUY THIS!!!!!
I have never cooked tapioca, never in my life. I have never made a merangue. But I was tired of paying almost $5 for a small tub of pre-made, store bought tapioca so I thought I would try this because of the reviews from others. I cannot properly explain how this product has changed my life. Instead of buying the tapioca in the store (the pre-made stuff - tasted okay, or so I thought before I cooked Bob's Red Mill Tapioca from scratch! At first I wasn't thrilled at having to buy eggs, 2% milk, and vanilla extract in order to make this. And when I tried to make the meringue that this recipe calls for I messed up the first batch because I tried making it in an old plastic bowl. So I went online and learned the proper way of making a merangue (since I don't have a metal or glass mixing bowl, I ended up using a 2 quart non-stick pan - it worked great!). Once I mastered the technique of whipping up the egg whites and making a merangue, I was set! I have made 4 batches of this tapioca so far and just cannot tell you how GREAT it is. So light and fluffy and it is made fresh, out of good, healthy, natural ingredients. I am absolutely thrilled with this product. I was so proud of myself learning how to do this that I left a large bowl of it for some friends from church - they love it, too!!!! I ordered this through the "subscribe and save" option. This lowered the price and I get free shipping! This makes the cost of tapioca almost free compared to the stuff I bought at the store. Like I said before, I have made 4 batches of this so far and I seems as though the bag is still as full as when I opened it - this stuff is going to last forever! I like it so much I am going to order a bunch of this to give as Christmas presents and I can't wait to try variations on the basic recipe. If you like tapioca pudding, I HIGHLY recommend buying this product. After you make a batch or two is becomes really easy, even if you have no experience cooking like this - like me (I actually enjoy whipping the eggs whites by hand to make the merangue - who knew?!). Get this product and order it through the 'subscribe and save" option, you can't go wrong!!!

I LOVE this product
I LOVE this product, I just ordered their 4 pack (4, 24 oz. packages), which you can order through Amazon: https://www.amazon.com/gp/product/B000KEJMRI/ref=oh_aui_detailpage_o00_s00?ie=UTF8&psc=1 The package directions are very clear but I differ a bit: I use whole milk instead of a mixture of water and 2% milk. Also, I do not separate out the eggs and sugar, I simply put all of the ingredients in a covered bowl and put in the fridge over night. By soaking for many hours, it seems that the starches are more consistent, and therefore cook much more evenly and predictably, making for less chance of scorching or cooking too much of the water out, resulting in a product that is too firm (and dry). This procedure will translate into a rich, creamy consistency - also it is much easier to cook: By allowing the starches to reach their saturation point, as described above, you can put the pot on the stove, set it on low/medium (not likely to scorch at this temp), and simply let it come to temp. Tapioca begins to cook at about 140 - 160 degrees F (depending on altitude). The mixture will begin to froth slightly and become more opaque. Continue to stir to avoid scorching, and as soon as you see the first few bubbles coming up (this will happen at about 212 degree F) it is well above the cooking temp and the tapioca is doing its magic :). At this point immediately turn the temp down to low/low and stir until the tapioca pearls are not crunchy but smooth and to your taste. It takes about 6 minutes with my stove and at this altitude - your time will likely vary - but the tapioca itself will tell you when it is done - just keep tasting it regularly along the way :) At this point set the tapioca aside and let cool down a bit and then add the vanilla. At this point I also add a secret ingredient (an equal amount of caramel extract). Enjoy! PS: Please overlook any typos, I could not find a way to proof read/edit the text.

Their recipe has changed
Bob's has changed their recipe. Following the new instructions, it takes over an hour to cook on the stove top. This results in a very hard product that could be used for concrete foundation. I like mine more creamy. After three attempts, I have a recipe that results in a creamy pudding. In a medium sauce pot, soak 1/2 cup of pearls in 3/4 cup of water for 10-15 minutes. Do not drain excess liquid. Add all ingredients from the package recipe into the pot; 4 cups milk, 1/2 Cup Sugar, 2 Eggs, 1/8 tsp. Salt, 1 tsp Vanilla. No need for the cream. Wisk all together over medium to high heat. Stir constantly. As the mix approaches a boiling point, the mix will thicken and the pearls will be visible on the surface. At the first sign of a low boil, remove from the heat and pour into serving bowls. Do not let the mix achieve a boil! Now we have a creamy, yummy dessert. Serves 2 in our home but you could get 4 nice servings.

El producto tiene muy buena calidad, como todo lo de Bob's Red Mill. Las perlas de tapioca llegaron en perfecto estado, bien empaquetadas y con buen sabor al cocinarlas. Sin embargo, hay que tener en cuenta que son perlas pequeñas, no las perlas grandes típicas del bubble tea. Nosotros originalmente las compramos para preparar té de burbujas, pero al ver que no eran del tamaño adecuado, decidimos usarlas en otras recetas, como pudines y postres, y ahí sí han funcionado perfectamente. Textura suave, buena consistencia y resultado muy satisfactorio. En resumen: si buscas perlas pequeñas de tapioca para postres u otros usos, este producto es excelente. Si lo quieres para bubble tea, mejor busca una versión con perlas grandes.
