I don't have the axe, however this knife comes with this cool sheath that can be worn handle facing down. So I'm gonna say yes you can

Is that/can that hook on top of the blade be used as a bottle opener?

I don't know if that is the purpose of the hook, but I have used it to open bottles, it's sturdy, works great.

Does the knife lock in as well as they claim?

Yes! The knife locks perfectly into the shealth and takes force to pull it out
