This delightful purple cheese is the invention of the Alvarez Valera family in La Mancha. It is aged for at least six months to produce a firm, flavorful goat milk cheese perfectly balanced with the bright aromatic flavor of red wine. The Alvarez Valera family created an innovative process where they mix red wine with fresh goat's milk early in the process, so the entire cheese is infused with the flavor of red wine. They were inspired by traditional cheeses that were soaked in wine to color their rind, but the flavor and color of the wine never penetrated the interior. They decided to take this idea to the next level to produce a true marriage between cheese and wine. Buenalba cheese is made using very fresh milk from goats owned and raised by the company at a farm right next door to the cheese making facility. The cheese is aged for over six months. La Prudenciana is a cattle and agricultural property located in the core of La Mancha region. Year after year, generation after generation, the family business has developed and complemented its farm and cattle activity with the transfomation of the milk of around 8.000 manchega sheeps into artisan Manchego Cheese with D.O. certification. They use only high quality raw milk which comes from selected herds. In this way they keep control of the whole production process, following a careful ageing process which controls temperature and humidity with total respect for the artisan tradition.
