Q: Are the handles hollow? i need it hollow for some diy workshop items.

It's just like a typical wire whisk where there is a central wire that comes up threw the spiral of the handle but there is visibility threw it. So not completely hollow but there is space there that would likely work for your craft project.

Q: What are the dimensions of each whisk?

Measurements are: Just a tick over 5" long, whisk end to handle end. Actual whisk portion is 2.25" long, whisk end to the metal disc. Width of whisk portion is 7/8"

Q: Why are these labeled as endurance risks? Are these meant to help emulsify?

They do not last long as they either pit, oxidize, or rust. Mine were definitely not stainless steel. They work to emulsify, but you have to rinse in only warm water and dry if you want to be able to use them again. My hot soapy sink dishwater ruined them, or they rusted in the sink overnight.

Q: Are these stainless steel? My whisk is corroded and so I only want to replace it with a stainless steel one.

While they are very good the tips of them up on the handle where all the wires are tucked under the very tip of them did start to rust but we were not using them for a food we used them to stir and mix up mini batches of paint colors, so they have had long exposure to paint, paint thinners, water, and paint cleaners As they are very small only 4 inches long by an inch wide they were perfect for our application and are very durable I like them a lot. They could be use as drink mixers for all sorts of drinks as long as they are cleaned, dried and stored properly they should be fine for a good amout of time for the price you can not really get a better deal honestly.
