Q: how tall is the coil without including the inlet and outlet arms?

The coil can be expanded by pulling them apart. If not and left as rolled, then the coil is approximately 6".

Q: how wide is this coil? I'm using it for a custom installation

It is just over 9" diameter with the largest ring.

Q: Does this come with the hoses and clamps or is it just the coil?

Hoses and clamps are purchased separately.

Q: Want to use in a fire pit connected to a pressurized water supply from my pool, heat the water in the pit and return to the pool. Will this work?

It is copper. Look up the temperature behavior of copper and compare to wherever in or under the firepit you intend to put it, taking account of whether it will ever run out of flowing water. Expect it to survive conditions typical of a hot water tank, and not survive fire without flowing water. There is also some corrosion risk from chlorine shock conditions, and ozone, if injected into the pool. For an application of this sort I would suggest stainless steel, or the titanium core of a scrapped pool heater.
