So this stuff is weird. It's a little sour. It doesn't come off as fruity the way they say, but ... I dunno, it does taste "different," in a much larger way than expected - in the way that a pear tastes different than an apple. If someone gave you eight chocolate chips with one of these mixed in, and you ate them all at once without looking, you'd notice.It's a pleasant taste, but it's complex. It's taking some effort to learn what flavors work well with it (try strawberry with black truffle salt, or stronger than usual lime.)Temper it like milk chocolate.I like it. I'll probably buy more.Make sure that you buy from someone that ships with cold packs. This stuff is more temperature sensitive than most of my Callebaut products

Not bad but not mind blowing
I have used callebaut’s #811 dark chocolate for years to make holiday chocolates as gifts for friends and family. This year I thought I’d change it up a bit and try the fabled ruby chocolate in addition to my usual dark chocolates. The flavor was good but not as pronounced as I had expected. It has a distinct milk chocolate flavor with very subtle notes of raspberry and sourness. It’s good but the subtlety of the flavors was lost on most of my friends until I pointed it out. Overall it was a fun experiment using but I don’t think I will use it again because it is just too similar to their regular milk chocolate in flavor and costs more. Also it was a little more difficult to make molded shells with as its viscosity was a bit on the thick side at the temps listed on the bag. If you want to cast a solid mold, you should be fine but it you wan to make shells, to fill and cap be aware that it might take a little more trial and error than your are used to to dial it in and keep the chocolate in temper at the same time.

You'll get Either 33% or 47%
Ordered because it said 47% but I received 33%. This is pretty much a gamble If you want 47%. Some people got it but others didn't Including me. If you don't care then get it. If you do, consider other methods unless you're feeling lucky. You'll still get delicious chocolate.

Not a consistent Quality, sadly.
Two problems:1. Ordered because it said 47% but I received 33%.2. I opened all chocolate was 1 block, not pallets as if the chocolate had melted.... this didn't happen the couple of times back I ordered this chocolate. This is not a cheap product, so, not having a consistent Quality experience with this seller is frustrating. I will Only purchase again if I cannot find it somewhere else, ugh.

cocoa content not as pictured
I purchased this because I am familiar with it and have been working with it for a couple of years. I always brought it back from Europe but when I saw it on amazon at a reasonable price I jumped on it. Big disappointment since what I received is not what the picture shows. In my pic you can see what I use on the left and what I received on the right. I wrote the seller who swore to me that it is the exact same thing but it has to do with FDA and how it is supposed to be labelled. This is BS, the product is still good if you haven't had the original one but when you can compare taste side by side it is not quite the same. For that reason I gave it 4 stars instead of 5

On photo to this product it 47% should be. It is why we ordered it. But got 33%.
