Tastes like sugar
Erythritol is really great as a sugar substitute. It tastes like sugar and doesn't have that weird aftertaste that Stevia has (though Stevia's not too bad if that's all you can have). I stopped using it for now because I read some recent headline about erythritol POSSIBLY having a negative effect on the heart for people who already have or are at risk of hereditary heart issues. This is just a headline, though, of some recent research on the effects of this sweetener which hasn't been verified. The jury is still out. Sorry, I don't have any kind of link to this research. I think this sweetener is fine for healthy people, but that's just my opinion. I might use the bag of erythritol I have left in some keto cakes and stuff, but not in my coffee like I been doing. But be aware of this research. It might end up being a false alarm.

Healthier than regular sugar
I began the Keto diet 5 years ago and traded all regular flour and sugars for a healthier type of flour and sugars. I like using this product because it tastes just like sugar but has far less calories and is much better for me. Great value for the money.

Good substitute for sugar for common uses and pricing hasn't spiked
I've been using granulated Xylitol as my sugar substitute for a number of years now. I'm perfectly happy with it - it's nearly a 1:1 substitute (I'd say 95% as sweet) tastes fine, and I have no digestive issues with it as some people do. However, the primary sellers of granulated Xylitol seem to have become a bit greedy in the last couple of years, and I've been comparing Erythritol prices to Xylitol prices, waiting for the scales to tip in favor of Erythritol, and they finally have. One important note, however - even though some Erythritol sellers claim it is a 1:1 substitute for sugar/xylitol, it is not. I find Erythritol to be about 80% as sweet, which means usage and price need to be multiplied by 1.25 for comparison purposes. That said, when this product's price is multiplied by 1.25, it's about 34 cents/ounce, and the lowest granulated xylitol I can find at the moment is about 37 cents/ounce.Usage-wise, most of my Erythritol use is as a sweetener in coffee and on cereal, so I can't comment on its performance in baking or other cooking situations.
