Not true Thyme honey
This honey, although marketed as Thyme honey, does not taste authentic. As a Greek I'm familiar with the distinctive taste of thyme honey and this was definitely not it! This was not a cheap purchase so I'm very bummed. The honey tastes good and is of good quality, but not true Thyme. It has more of a wildflower taste. Guess I will use it for cooking - lessened learned. If you're chasing true Thyme honey I do not recommend this. However of you're just interested in good honey then buy away.

Crystalized honey--disappointing--loosing trust.
Why? This is my 3rd jar of this honey ordered during the last 1 &1/2year & it is again crystalized. Dashed hopes for a fresh, fluid honey. Jars have the same expiration date: 31/12/20233 stars because:1. the vendor carefully cushioned the jar with 3 layers of bubble wrap in a sturdy box & it arrived unbroken.2. The Oak Tree honey itself is deliciously not too sweet & is perfect for my taste. I love the taste.3. Nutrients are unaffected by crystallization & therefore I am still benefiting from the nutrients.NOTE: How long does it take this wonderful honey to crystallize? What happened?For paying a premium price--I expect a fresh fluid honey.

Not for the faint of heart
If you are a honey-adventurer, you are going to want to have Strawberry Tree honey on your list. That is because it is more of an "experience" than a "honey." Yes bees make it, but that is about where it's resemblance to what we think of as honey ends. It is an anomaly in two important ways: First, of course, is its taste. For about a second your tongue first notices some mild sweetness. That rapidly changes to sharp, almost astringent notes of green ivy or other woody plants (or some say coffee dregs, which is also accurate), then it finishes in just straight-out bitterness (and no, I don't mean bitter-sweet...I mean bitter). There could be no more unusual tasting honey on the planet. Its second anomaly is this: As a general rule of thumb, darker honey varieties have more antioxidants,etc, than lighter ones. Strawberry Tree is again an exception to the rule. It is a very light golden color, yet may be the healthiest of any honey. I am very impressed with the quality of the Ebion brand. The texture of my honey is beautiful....it is thick and very fine-grained, like a spreadible honey. It arrived very well-packaged, with no breakage or leaks.

Delicious and quality
This is a very nice honey. Not like any I have eaten before. This honey is thick and paste like it still has some viscosity while at room temperature, I live in New York so it’s quite cold out now. This is a raw honey so it can seem grainy with the texture since it’s has not been processed. That being said it’s a sign that you know your getting the benefits from the product. All the extra nutrients and minerals from the wild.You can tell that this company takes pride in their work and harvests the finest honey from the mountains of Greece. It is delicious it doesn’t taste like the brown bear honey here in America. It is rich in flavor but doesn’t not come across as overly sweet I enjoy the consistency being a little thicker makes me feel like I don’t need to eat as much.Overall if you are a honey person looking for a great product you would not be dissapointed in the oak tree honey from the mountains of Greece. I highly recommend this honey

Wonderful Honey!! Enjoyed trying the different honey’s they offer at least the ones I could afford$ Hoping to try All🙏…but look’s like they might not sell on Amazon much longer 😢hope not Thank You Ebion🥰

Dreadful gritty texture, that doesn't go away...
Dreadful gritty texture, that doesn't go away... Heating, stirring, nothing seems to get rid of the 'sandiness'. The flavor is light, exactly what I hoped for, but the honey is unusable. Is it too old? Expiration is 12/2023 so a few months left. But since honey lasts so-ooo long, I wonder when this was actually bottled. What a shame!

Perfumy Honey
I am a honey aficionado and was excited to try this one. This particular honey was very perfumy. Its a medium sweet level, with heavy floral accents. It came hard in the jar - I had to melt it. The square jar and redish tone hue was pretty- this would make a nice gift.

Not worth it
Definitely not worth the money considering the size of the jar, plus the Tyme flavour made it taste quite disgusting.
